pork shoulder

medium onion
diced

garlic

roasted Hatch Green Chile
peeled & chopped

chicken broth

cumin
Salt & pepper to taste
Instructions
Heat olive oil in a large pot over medium heat.
Brown the pork on all sides.
Add diced onion and cook until translucent.
Stir in garlic and cook for 1 minute.
Add Hatch Green Chile, broth, cumin, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 1 hour.
Serve hot with tortillas or over rice. |
