Hatch Green Chile Stew
A bold and hearty New Mexico classic loaded with fire-roasted Hatch Green Chile and tender pork.
Ingredients
- 2 tbsp olive oil
- 1 lb pork shoulder cubed
- 1 medium onion diced
- 4 cloves garlic minced
- 2 cups roasted Hatch Green Chile peeled & chopped
- 2 cups chicken broth
- 1 tsp cumin
- Salt & pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the pork on all sides.
- Add diced onion and cook until translucent.
- Stir in garlic and cook for 1 minute.
- Add Hatch Green Chile, broth, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Serve hot with tortillas or over rice. |
