Ingredients
  

  • 2 tbsp olive oil
  • 1 lb pork shoulder cubed
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 2 cups roasted Hatch Green Chile peeled & chopped
  • 2 cups chicken broth
  • 1 tsp cumin
  • Salt & pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Brown the pork on all sides.
  • Add diced onion and cook until translucent.
  • Stir in garlic and cook for 1 minute.
  • Add Hatch Green Chile, broth, cumin, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 1 hour.
  • Serve hot with tortillas or over rice. |
